Recipe: Lemon Coconut Snack Bites

These delicious bites are a great little pick me up for that afternoon lull. This one's for you Nic!  

As well as being vegan; gluten and sugar-free, these little tasty bites are packed with protein to keep you going until your next meal. Unless you eat the lot that is! They are super easy to make and will keep for up to a week in an airtight container. 2 weeks in the fridge and you can even freezer them too. What are you waiting for!

Ingredients

(makes approx 18) 

200g pecans 

10-12 pitted dates 

4 tbsp Desiccated coconut (plus extra for decoration)

Zest of 2 lemons 

2 tbsp chia seeds

2 tbsp of coconut jam 

2 tbsp of coconut oil

Pinch of sea salt 


Method 

Measure out your coconut oil and melt on a low heat in a pan. Whilst this is melting, measure out the rest of your ingredients and add to your food processor. Pour in your melted coconut oil and give it a good blitz. Then take a heaped tbsp of your mix and roll it into a ball in your hands. You can even roll each ball in a little desiccated coconut for a little bit more of a crunch. Simple. Then repeat until you've got a jar full of yummy balls.
