Recipe: Asian-inspired, quick lunch, noodle jar, with a kick

Prepping for the week. These jars of goodness are great for a quick lunch in the week. Prep these jars the day/evening before and pour boiling water over when ready to serve.

Ingredients and method:

Add rice noodles, fresh veg that cooks quickly in hot water, like finely sliced mushrooms, chopped peppers, finely sliced cucumbers, spring onions, thinly peeled carrot slices, spinach, mangetout.

For flavour and a bit of a kick, add chopped cashews, fresh coriander leaves, grated ginger, chopped fresh chilli or chilli flakes, a squeeze of lime juice, tbsp of soy sauce, a dried star anise for some extra flavour. Sometimes, I also add a tbsp of maple syrup too for a hint of sweetness, which balances out the lime juice and saltiness from the soy sauce.
